Tacquitos and guacamole
1 can corned beef
1 dozen corn tortillas
1 bunch of green onions
2 ripe avacadoes (peeled and cut up)
1 small can green chilies
1 small chopped onion
1 small chopped tomato
1 tsp garlic salt (or to taste)
salt to taste
1/2 tsp lemon juice
Fry tortillas in oil, just until pliable (soft) drain on paper towel.
Cook corned beef and green onion together just until hot.
Spread corned beef on edge of tortilla and roll up, secure with a toothpick.
Do this with all tortillas.
I usually use about a tablespoon of corned beef or a little more)
Fry tacquitos until crisp in frying pan.
Remove from oil and let drain.
Smash avacadoes and add remaining ingredients. Serve over tacquitos
Pairs Well With
This recipe was given to me by my sister in law when she saw I was using roast beef as the filling and store bought guacamole. I quit buying store bought guac and this is another favorite of the family.
I will serve it as an appetizer when having a party. When I want to use them as a main dish I will make refried beans and spanish rice. They are the best
