Ingredients

6 eggs
1/2 yellow or orange pepper
1/2 onion
1 small tomato

Beat eggs in a large bowl. Chop pepper, onion & tomato together. Sprinkle ham into the mixture. Pour slowly into beaten eggs. Beat slowly so the it doesn't become watery. Pour into small frying pan {as if you are making an omelet} As one side cooks, sprinkle cheese in. Just as the one side is cooked, begin to scramble until evenly mixed. Sprinkle in some pepper.
