Taro Root - 10
Onion- 1/2 medium
Green Chili - 2
Curry Leaves - 5
Coriander Powder - 1/2 tsp
salt - 1/2 tsp
cumin seeds - 1/2 tsp
mustard seeds -1 tsp
Cilantro - 1 Tbsp
For Flour Coating:
Rice Flour - 1 Tbsp
Turmeric - 1/2 tsp
salt - 1/2 tsp
red chili powder - 1/2 tsp
Oil - 2 Tbsp
Directions
Boil the Taro Root or 15 to 20 minutes until they are semi soft. Drain and let them cool. Once they are cool, remove the peel and cut them into rounds (circles).
Mix the ingredients under Flour Coating section in a medium bowl. and Add the taro Root rounds to this mixtures and coat them on all side.
Heat 1 Tbsp oil in the non-stick pan and shallow fry these seasoned taro root rounds until turn into golden color. Switch off the stove and keep them aside.
Heat the non-stick pan and add 1 Tbsp oil to it. Once the oil is hot, add cumin and mustard seeds. Once they start spluttering add the curry leaves followed by chopped green chili and onion. Saute them for 3 min.
Add salt to the onion mixture and saute for 2 min.
Now add the fried Taro Root pieces to the pan and mix it gently with onion mixture. Add the coriander powder and stir-fry on high heat for 5 min.
Taste and adjust all the seasonings and top with chopped cilantro. Switch off the stove and serve hot with white rice and tomato rasam and it tastes Yummmm!
