Tea Cakes a.k.a. Butter Balls
1 c. butter
1/2 c. powdered sugar
1 1/4 c. sifted flour
1/2 tsp. vanilla extract, or 1-2 Tbs. rum or brandy
1/2 c. finely chopped pecans or walnuts
powdered sugar for garnish
Cream butter and powdered sugar. Blend in vanilla, flour and nuts. Chill for about 30-40 min. Roll into small balls and bake on ungreased cookie sheets at 350º for 20 min. Do not let them turn brown. When done, roll in powdered sugar. Cool for 10-15 min. and dust with more powdered sugar.

You're all probably familiar with this recipe. There are so many versions of it out there. Some call it Mexican Wedding Cakes, some call it Russian Tea Cakes and I'm sure there are many other names for it. Have any of you ever tried using coconut instead of the nuts? DH and I like these best made with black walnuts!!
