This was a nice vegan friendly meal that gave me the flavor and reminder that I can still enjoy a "meat" and "potatoes" style meal without the additional carbs.
Ingredients You'll Need
Fresh green beans and mushrooms
2 tbsp coconut aminos
Peel and chop radishes in halves
Coat in oil and roast for 15min
presoak green beans and mushrooms in coconut aminos, quick 5 min sautéed on stovetop
add marinated veggies to radishes and continue to bake at 250 for 15min
Top with fresh oregano and serve hot!
