Tequilla Lime Chicken

Serves 6 | Prep Time overnight | Cook Time 20

Ingredients

6 medium boneless chicken breast
1/4 c good Tequilla
1/2 c fresh lime juice
zest of 3 limes
2 tsp red pepper flakes
2 smashed garlic cloves
2 t salt and pepper
2 T olive oil


Marinate everything in a large plastic bag set in a bowl over night in fridge. Preheat grill for 15 minutes. Place chicken skin side down ( if using skinned) and cook for 6-8 minutes, turn and cook another 8 mintues or until chicken is cooked to 180 or juices run clear. I serve with rice that I have added fresh cilantro and lime zest to.
