Terkle's Favorite Mushroom Quiche
3 quarts mushrooms, chopped
3 T butter
1/2 cup chopped saltine crackers
3/4 cup sliced green onions
8 oz Monterey Jack cheese
1 cup cottage cheese
1/4 tsp paprika
1/4 tsp pepper
Saute together the mushrooms and butter; drain and add 1/2 cup saltines. Mix together and put into a 9-inch pie plate.
Saute 3/4 cup sliced green onions in 1 T butter for 1 minute; spread over the mushrooms. Mix together the cheeses, eggs, paprika and pepper, and beat well. Pour over the mushroom mixture and sprinkle with more paprika.
Bake at 350° for 30 minutes
