TERRIFIC TUSCAN VEGGIE SOUP
Terrific Tuscan Veggie Soup

- One 15.5 ounce can cannellini or other small white beans, drained and rinsed.
- 1T olive oil
- 1/2 large onion, diced (about 1 cup)
- 1 medium carrot, diced (about 1/2 cup)
- 1 small zucchini diced
- 1T minced garlic
- 1T thyme or 1t dried
- 2t chopped fresh sage or 1/2t dried
- 1/2t salt
- 1/4t ground black pepper
- 4 cups chicken or veggie broth
- One 14.5 ounce diced tomatoes with juice
- 2 ounces baby spinich chopped
- 1/3 cup freshly grated Parmesan cheese
DIRECTIONS
In a small bowl, mash half of the beans with a masher or the back of a spoon; set aside. Heat the oil in a large soup pot over medium-high heat. Add onion, carrot, zucchini, garlic, salt and pepper. Stir until veggies are tender. Add the broth and tomatoes and bring to a boil. Add the mashed and whole beans and the spinach leaves; cook until the spinach is wilted, about 3 minutes. Serve topped with cheese if desired.
