TEX MEX VENISON SAUSAGE
- 6 lbs. venison, cubed
- 1 1/2 tablespoons black pepper
- 6 lbs. pork, cubed
- 1/4 teaspoon Allspice
- 1 1/2 tablespoons. garlic powder
- 1 tablespoon crushed red pepper, to taste
- 1/4 cup salt
Mix all ingredients and grind several times.
Smoking improves the flavor, but sausage may be frozen without smoking in patties, sausage bags, or casings.
