Tex Mex Venison Sausage
6 lbs. venison, cubed
1 1/2 tablespoons black pepper
6 lbs. pork, cubed
1/4 teaspoon Allspice
1 1/2 tablespoons. garlic powder
1 tablespoon crushed red pepper, to taste
1/4 cup salt
Mix all ingredients and grind several times.
Smoking improves the flavor, but sausage may be frozen without smoking in patties, sausage bags, or casings.
