Tex-mex Chicken Casserole
1 Onion, chopped
2 cups cooked chicken, shredded
1 can cream of chicken soup
1 can Rotel with cilantro, undrained
1 tsp cumin
1 dash garlic powder
1 can nacho cheese
1/4 cup sour cream
4 large flour tortillas, cut in strips
crushed tortilla chips
2 cups grated cheddar cheese
Preheat oven to 350.
Saute onion til tender. Add all other ingredients except for chips, tortillas and cheddar cheese together over medium heat until just bubbling. Remove from heat.
Lightly grease 13x9 baking dish with non stick spray. Layer bottom of dish with tortilla strips. Pour in chicken mixture. Top with crushed chips.Cover with grated cheddar cheese. Bake in oven 20 minutes or until cheese is melted.
