Ingredients

3 cups cooked black-eyed peas, drained and cooled
2 cups of whole kernel corn, drained
1 cup (one can) black beans, drained
1/2 cup diced yellow onion
1 cup diced red onion
1 green or red bell pepper, diced
1 tablespoon minced garlic
1-2 small green jalapenos, minced
1 heaping tablespoon Cajun seasoning (like Tony Chacery's)
1/3 cup olive oil
1/3 cup red wine vinegar
1 teaspoon black pepper


Mix all ingredients above in a large bowl. Chill in the refrigerator for 24 hours or over night. Stirring again before serving

This makes a great side dish or relish on tortilla chips!
