- 4-6 potatoes, peeled and sliced french-fry size
- 1 small onion, finely chopped
- 2 Tbsp olive oil
- 1 Tbsp bacon drippings
- salt and pepper
- Heat oil and drippings in skillet over medium-high heat, add potaoes and onion. Sprinkle with salt & pepper. Cover and cook for 20 minutes, turning potatoes when brown on bottom.
