Texas Fried Potatoes

 


INGREDIENTS

  • 4-6 potatoes, peeled and sliced french-fry size
  • 1 small onion, finely chopped
  • 2 Tbsp olive oil
  • 1 Tbsp bacon drippings
  • salt and pepper

DIRECTIONS

Heat oil and drippings in skillet over medium-high heat, add potaoes and onion. Sprinkle with salt & pepper. Cover and cook for 20 minutes, turning potatoes when brown on bottom.
