THAI BARBECUED CHICKEN

Ingredients

  • 1 whole chicken, cut-up
  • For the marinade:
  • 1/2 c. coconut milk
  • 6 T. grated ginger
  • 6 garlic cloves, grated
  • 4 T. brown sugar
  • 5 T. fish sauce
  • 1/4 c. black bean sauce
  • 1 T. red pepper flakes

Directions

  • Place all marinade ingredients into a food processor and puree.
  • Pour over chicken and refrigerate overnight. Grill or bake basting frequently with marinade until chicken is done.
  • Serves 4

Notes

Great on the grill or baked in the oven.
