- 1 whole chicken, cut-up
- For the marinade:
- 1/2 c. coconut milk
- 6 T. grated ginger
- 6 garlic cloves, grated
- 4 T. brown sugar
- 5 T. fish sauce
- 1/4 c. black bean sauce
- 1 T. red pepper flakes
- Place all marinade ingredients into a food processor and puree.
- Pour over chicken and refrigerate overnight. Grill or bake basting frequently with marinade until chicken is done.
- Serves 4
