THAI GRAPEFRUIT & JICAMA SALAD

- cups thinly sliced matchsticks of red cabbage, 2 cups matchsticks of jicama, 1 cup matchsticks baby carrots, tossed with 3 tbsp chopped cilantro, chunks of a whole ruby red grapefruit, 4 tbsp seasoned rice vinegar, 1 tbsp fresh lemon juice, and finished with glazed pecans.
- Makes 5 servings. Cut all veggies into matchstick pieces, toss with chopped cilantro, seasoned rice vinegar, chunks of grapefruit, and top with pieces of glazed pecans.
NotesThinly sliced red cabbage, carrots and jicama are complemented by the sweetness of seasoned rice vinegar, grapefruit and glazed pecans. Cilantro adds a punch of flavor.
