Thai Grapefruit & Jicama Salad
Why I Love This Recipe
Thinly sliced red cabbage, carrots and jicama are complemented by the sweetness of seasoned rice vinegar, grapefruit and glazed pecans. Cilantro adds a punch of flavor.
Ingredients You'll Need
cups thinly sliced matchsticks of red cabbage, 2 cups matchsticks of jicama, 1 cup matchsticks baby carrots, tossed with 3 tbsp chopped cilantro, chunks of a whole ruby red grapefruit, 4 tbsp seasoned rice vinegar, 1 tbsp fresh lemon juice, and finished with glazed pecans.
Makes 5 servings. Cut all veggies into matchstick pieces, toss with chopped cilantro, seasoned rice vinegar, chunks of grapefruit, and top with pieces of glazed pecans.
