THAI TURKEY AND RICE

Ingredients

  • 1/2 cup chopped Onion
  • 1 tbsp Oil
  • 3 minced Garlic cloves
  • 1/2 pound sugar snap Peas
  • 1/2 cup shredded Carrots
  • 3 cups cubed, cooked turkey tenderloin
  • 3/4 cup reduced-sodium Chicken broth
  • 1/4 cup rice Vinegar
  • 2 tbsp Sugar
  • 2 tbsp Soy sauce
  • 1 tsp crushed red Pepper
  • 1 cup cooked rice
  • 2 tbsp chopped Basil leaves
  • Salt to taste
  • Ground black Pepper
  • 4 Lime wedges

Directions

  • Step 1: In a bowl, mix broth, vinegar, sugar, soy sauce, and pepper flakes well.
  • Step 2: Heat oil in a pan, then add onion and garlic, and cook until onion becomes soft.
  • Step 3: Add snap peas and carrots, and cook 2 minutes, then add turkey and cook until it becomes golden brown on all sides
