Thanksgiving Sweet Potatoes

Why I Love This Recipe


Ingredients You'll Need

4 sweet potatoes, peeled and cut into 1-inch cubes or half-rounds
1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
1/4 cup honey
1 tablespoon ground cinnamon
Salt and freshly ground black pepper
1.5 or 2 cups fresh cranberries

Toasted pecans:
1 c pecans
1 egg white
2 tablespoon white sugar
1 tablespoon cinnamon
1/4 tsp vanilla


Directions

1. Preheat oven to 375 F and spray a glass brownie pan with cooking spray


2. Mix potatoes with oil, honey, cinnamon, salt and pepper


3. Add cranberries to mixture


4. Bake 30 minutes or until tender


5. Remove from oven without turning it off


For pecans:


1. Mix egg white with vanilla in a small bowl


2. Add the pecans and mix to create a liquid coating


3. Add cinnamon and sugar and mix well


4. Spread on a baking sheet lined with parchment paper


5. Bake at 375 F for 8-10 minutes


Allow pecans to cool before adding them to sweet potatoes
