THE BEST KEY LIME PIE

Ingredients

  • 1 (5 1/3 oz) package graham crackers, crushed
  • 1/4 cup sugar
  • 1/4 cup butter, plus
  • 2 tablespoons butter, melted
  • 3 egg yolks
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 1/3 cup powdered sugar
  • 1 1/2 teaspoons lime rind, grated
  • 1 cup whipping cream
  • 1/3 cup powdered sugar

Directions

  • Combine graham crackers crumbs, sugar and butter and press into pie plate.
  • Combine egg yolks, condensed milk, lime juice, powdered sugar and rind and spoon into pie crust.
  • Bake at 325° for 30 minutes. Cool completely on a wire rack and chill for 2 hours. Whip cream and powdered sugar and spoon on top of chilled pie.
