The Best Shrimp Scampi
15 to 20 small shrimp
2 to 4 tablespoons butter
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, finely chopped
Salt and pepper
1 teaspoon each of basil and parsley
½ teaspoon oregano
¼ to ½ cup dry white wine (or more)
2 teaspoons fresh lemon juice
1. This dish is cooked over medium heat and must be stirred constantly throughout.
3. Heat 2 tablespoons butter and olive oil in a skillet over medium heat; add onions and sauté for 2 to 3 minutes until transparent. Add garlic and sauté about 1 minute (do not brown it). Add a little more butter and sauté 2 to 4 minutes. Add the wine and reduce the liquid some. Add the shrimp and cook until “curled.” Just before serving, add lemon juice, and simmer 1 to 2 minutes. Adjust seasonings if needed.
3. Serve over rice.
