  • 15 to 20 small shrimp
  • 2 to 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, finely chopped
  • Salt and pepper
  • 1 teaspoon each of basil and parsley
  • ½ teaspoon oregano
  • ¼ to ½ cup dry white wine (or more)
  • 2 teaspoons fresh lemon juice


  • 1. This dish is cooked over medium heat and must be stirred constantly throughout.
  • 3. Heat 2 tablespoons butter and olive oil in a skillet over medium heat; add onions and sauté for 2 to 3 minutes until transparent. Add garlic and sauté about 1 minute (do not brown it). Add a little more butter and sauté 2 to 4 minutes. Add the wine and reduce the liquid some. Add the shrimp and cook until “curled.” Just before serving, add lemon juice, and simmer 1 to 2 minutes. Adjust seasonings if needed.
  • 3. Serve over rice.
