THE GRUEN'S ARAB POTATO SALAD

Ingredients

  • 6 medium potatos
  • 1/2 c. olive oil
  • 1/2 c. lemon juice
  • 1 clove of garlic
  • 1 tsp salt (to taste)
  • 2 tbsp. chopped parsley
  • 2 tbsp. chopped scallions
  • 2 med. tomatos cut into 1/8

Directions

  • Boil potatos whole for 20 minutes
  • Remove peel and chop
  • Mix oil, lemon, salt and garlic
  • Toss potatos in
  • Add onion and parsley
  • Garnish with tomatos
  • Serve room temperature
