There's no time to make dinner! Chicken-Pesto-Broccoli to the Rescue!
2 bags Frozen broccoli florets
1-2 lbs Chicken (raw or rotisserie depending on time)
1/4 cup + 2 TBSP pesto
1/2-1 cup Sliced Black olives
4 oz drained jar of artichoke hearts
1 cup grape tomatoes sliced in half
8 oz noodles cooked per instruction on box (whatever is in your pantry should work)
Grated parmesean cheese
Cook the frozen broccoli per instructions on the bag.
While the broccoli is cooking, slice into small pieces raw chicken and saute or start to tear apart the rotisserie chicken.
Drain water from cooked broccoli by cutting a small hole at the corner first, beware of steam.
In a bowl mix together the chicken, cooked broccoli, and the pesto.
Add more chicken or pesto if needed per your taste preference.
Add in any additional ingredients you would like and top with parmesean cheese if desired.

I don't remember when this dish came into being. It was a "last minute stop at the grocery store on the way home from work" creation. It is a three ingredient meal that depending on time can become an eight ingredient meal if you want. That's the beauty of it. I do believe it tastes great at its most basic state OR when you're looking for something fancier.
