Thousand island dressing
2 large egg yolks
1 T. white wine vinegar
¼ t. mustard flour
1 ¼ C. olive oil
¼ C. catsup
2 T. sweet pickle relish
Blend egg yolks, vinegar and mustard together until smooth. With the blender running and add a couple drops of oil, blend until smooth.
Continue in this manner until about a quarter cup of the oil has been incorporated, then add the oil in a thin stream blending all the while.
Add the catsup and blend until smooth. Mix relish into dressing by hand.
Store in a glass container, makes about 1 ½ cups.
