Three Cheese Croissants
4 medium croissants, split in half horizontally
2 cups grated Swiss cheese
4 slices ham/Canadian bacon or six slices bacon
1/4 cup grated Parmesan
1/4 cup grated Monterey Jack
5 large eggs
1 cup skim milk
1/2 tsp pepper
1/4 tsp nutmeg
Preheat oven to 350 degrees and butter four au gratin dishes. Place the bottom half of each croissant into a dish, cut side up. Spread Swiss cheese on each, place meat on top, then follow with all of the Parmesan and Jack cheeses, dividing each cheese equally among the croissants.
In a medium bowl, beat the eggs, milk and seasonings until frothy. Replace the tops and pour 2/3 cup of the egg mixture over each croissant.
Bake for 20 minutes or until the eggs are set and the croissants are a golden brown.
