Three Cheese Lasagna with Veggies
1 large onion chopped
4 garlic cloves minced
dash of olive oil
1 zucchini chopped finely
2 cups mushrooms sliced
1 large green bell pepper chopped
4 cups marinara sauce *see recipe
4 TBSP fresh basil chopped finely
1 teaspoon fresh oregano chopped
dash of salt and pepper
2 cups ricotta cheese
6 oz. fresh spinach chopped
2 handfuls of chopped parsley
1 cup parmesan cheese
16 oz. lasagna noodles cooked
2 cups shredded mozzarella
Preheat oven to 350 degrees.
Oil 13 X 9 inches baking dish.
In large pot sauté onions and garlic.
Add zucchini, mushrooms and bell pepper and cook 5 minutes.
Add tomato puree, basil, oregano, salt and pepper and cook 15 more minutes.
In a large bowl add ricotta cheese, spinach, eggs, 1 bunch parsley, 1/4 cup parmesan cheese.
Put around 1 cup tomato sauce to cover the bottom of backing dish.
Add noodles to cover baking dish.
Top with 1/2 ricotta mix.
Add half tomato sauce to mix.
Add noodles to cover
Add rest of ricotta mix.
Add rest of tomato sauce.
Add mozzarella cheese on top.
Put foil to cover very loosely as not to touch the lasagna.
Bake for 30 minutes then take off foil and cook an additional 15 minutes.
Garnish with rest of parsley.

Lasagna is a traditional Italian dish, however it traditionally includes meats such as ground beef, pork or chicken.
