Tofu Burritos

Serves 4-6 | Prep Time 5 minutes | Cook Time 20 minutes

Ingredients

One block firm tofu
One can black beans, drained and rinsed
One can diced tomatoes (preferably fire roasted)
Two to Three cloves chopped garlic
1/2 medium onion, minced
1 tsp. cumin
Olive oil
salt and pepper to taste
hot sauce (optional)
Corn Tortillas


Saute the onion and garlic for a few minutes in the olive oil until the onion is clear. Add remaining ingredients. Simmer for 15-20 minutes over low/medium heat. Spoon onto warmed corn tortillas and enjoy!
