One block extra firm tofu
1 cup cornstarch
1 Tbs. olive oil
Shredded Cheddar Cheese
1 cup cooked medium grain rice
Heat olive oil in 12' frying pan.
Cut the tofu into 1/2" cubes and coat each in cornstarch.
Add cornstarch coated tofu to the pan
Heat tofu, turning occassionally, until lightly browned.
Transfer to plate lined with paper towels.
Serve on warmed tortillas with refried beans, cheddar cheese, rice, hot sauce
