Tomato & Mozzarella Bruschetts
3 plum tomatoes, finely chopped
1/2 red onion
2 cloves garlic,finely chopped
1/4 c. chopped fresh basil
1/4 lb. fresh mozzarella finely chopped
2 T. balsamic vinegar
4 T. olive oil
salt & pepper
Toasted Italian Bread
In a large bowl combine tomatoes, onion, garlic,
basil & mozzarella. Stir in vinegar and olive oil.
Season to taste with salt and pepper. Top toasted
bread with mixture and place on baking sheet. Broil until cheese melts.
