Tomato Basil Soup
1 large mild onion, chopped
1/4 cup butter
1 1/2 lb. ripe tomatoes,chopped
2 1/2 cups chicken broth
3 Tbl. fresh basil chopped
fresh black pepper to taste
Saute onion in butter until soft.
Add tomatoes and continue cooking for a minute.
Pour in chicken broth and bring to a boil.
Lower heat to simmer for 20 minutes.
Add chopped basil.
Pour mixture in small batches into a blender or food processor.
Process until you get the cinsistency of your choice.
I like mine a little chunky.
Return blended tomato mixture to pot and heat until warmed.
