Tomato Bruschetta with Balsamic reduction
3# tomato's any type that look good
1/2 c loose packed fresh Basil leaves
1 garlic clove
1 small onion, diced small
1/2 loaf of french bread, sliced and toasted
1/2 c balsamic vinegar
2T white sugar
place vinegar and sugar in a small pot, cook over medium heat stirring once or twice until it is reduced by half and it becomes a syrup.
dice tomato, basil and onion and place in a bowl.
Set oven to broil and place sliced french bread about 2" from broiler, toast on both sides. While bread is still warm rub one side of bread with a peeled garlic clove.
Right before serving, place tomato mixture on top of garlic rubbed bread and then using a spoon drizzle vinegar reduction over top.
