Tomato Mustard Chicken
2 boneless skinless chicken breasts, cut into strips
1 tablespoon Dijon mustard
2 tablespoons chopped tomatoes
1 tablespoon olive oil
salt & pepper to taste (optional)
Heat 1 tablespoon olive oil in large nonstick skillet over medium heat. Sautée the chicken until cooked but still tender.
Add 1 tablespoon Dijon mustard and 2 tablespoons chopped tomatoes and stir. For a thinner sauce, add a little water.
