TOMATO PIE

Ingredients

  • 1 9" deep unbaken pie crust
  • 1 tbs sharp mustard (Dyon)
  • 5 ripe tomatoes peeled and sliced
  • 2 c pecorino cheese shredded
  • 1/2 c fresh basil leaves
  • 1 ts dried oregano or 1 tbs fresh
  • 2 tbs parsley chopped
  • 3 spring onions thinly sliced
  • 2 tbs olive oil
  • 6 drops of tabasco
  • 2 eggs beaten
  • 1 c whole milk
  • 1 clove garlic pressed
  • 1 ts cayenne pepper

Directions

  • 6 drops of tabasco
  • 2 eggs beaten
  • 1 c whole milk
  • Brush pie crust with mustard, fill crust with tomatoes, mix 1/2 c cheese with pepper and sprinkle on tomatoes,top with basil oregano,parsley and unions, sprinkle with olive oil tabasco mix.
  • Mix beaten eggs, milk, garlic, cayenne pepper, and rest of pecorino, top with egg mixture.
  • Preheat oven to 375 F (190 C) and bake pie 45-60 min till golden brown.
  • Serve warm or cold
