We all have busy lives, and many of us are health concious. This recipe gives you the flexibilty of instant soup, and the satisfaction of knowing exactly what's in it.
Ingredients You'll Need
1 med - large size ripe tomato
1 soft pitted date
2 Tbsp tahini
1 Tbsp chickpea miso (light miso)
1 Tsp tamari
1 Tbsp softened sundried tomato
3/4 - 1 cup water
Want spice - add chipotle chili powder or cayenne pepper.
Want extra creamy - add 1 Tbsp cashews
Put all ingredients into a high speed blender
Blend until smooth
Use either hot water or blend until warm
Garnish with sprouts, microgreens, diced red pepper.
