  • 8 firm, ripe tomatoes
  • 1/4 c chopped parsley
  • 1 garlic clove, minced
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 1/4 c olive oil
  • 1 Tbsp. wine vinegar
  • 2 tsp. Dijon mustard


  • Slice tomatoes into thick, even slices; set aside.
  • Combine remaining ingredient in small jar; shake well.
  • Layer tomatoes in a shallow dish, covering each layer with dressing.
  • Cover tightly.
  • Let stand at room temperature at least 20 min.
  • Chill and serve.
  • Halves easily.


Don't know if this is from the famous NY restaurant, but it's a delicious way to take advantage of all those wonderful summer tomatoes. I love recipes that let you make a sauce in a jar - such a great time saver.
