- 8 firm, ripe tomatoes
- 1/4 c chopped parsley
- 1 garlic clove, minced
- 1 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. pepper
- 1/4 c olive oil
- 1 Tbsp. wine vinegar
- 2 tsp. Dijon mustard
- Slice tomatoes into thick, even slices; set aside.
- Combine remaining ingredient in small jar; shake well.
- Layer tomatoes in a shallow dish, covering each layer with dressing.
- Cover tightly.
- Let stand at room temperature at least 20 min.
- Chill and serve.
- Halves easily.
NotesDon't know if this is from the famous NY restaurant, but it's a delicious way to take advantage of all those wonderful summer tomatoes. I love recipes that let you make a sauce in a jar - such a great time saver.
