INGREDIENTS

  • Cooking Time: 0
  • Servings: 8-10
  • Preparation Time: 15
  • 8 firm, ripe tomatoes
  • 1/4 c chopped parsley
  • 1 garlic clove, minced
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 1/4 c olive oil
  • 1 Tbsp. wine vinegar
  • 2 tsp. Dijon mustard

DIRECTIONS

Slice tomatoes into thick, even slices; set aside.


Combine remaining ingredient in small jar; shake well.


Layer tomatoes in a shallow dish, covering each layer with dressing.


Cover tightly.


Let stand at room temperature at least 20 min.


Chill and serve.


Halves easily.
