Tony's Blackened Soup
1 1/2 pounds hot italain sausage, cut into 1/2-inch pieces
1 1/2 pounds boneless, skinless chicken breast, cut into 1/2-inches pieces
2 Tbsp. minced garlic,
1 c. small diced yellow onion
1 c. small diced celery
1 c. small diced bell pepper
2 jalepeno pepper, seeded and minced
2 - 15oz cans diced tomatoes
1 quart chicken broth
1 tsp. fresh thyme leaves
1 Tbsp. fresh parsley leaves
1 Tbsp. Blackening Spice
1 tsp Tony's seasoning
Cook sausage and chicken pieces in a pot over medium high heat until all sides are browned.
Add the garlic, onion, celery, red pepper, tomatoes and jalpeno; stir and cook for 3 minutes. Add the chicken broth, thyme, parsley, blackening spice and Tony's;
Reduce heat to low and cook for 20 minutes.
Serve over a bed of white rice.
