TORTELLINI SOUP

Ingredients

  • 2 Tblsp olive oil
  • 2 minced garlic cloves
  • 1 med. onion, chopped
  • 2 carrots, pared & sliced
  • 1 zucchini, chopped
  • 3 sliced scallions
  • 3 sliced celery stalks
  • Saute a few minutes in a large saucepan, then add:
  • 1 can diced tomatoes
  • 1/3 cup parsley
  • 1 can drained kidney or cannellini beans
  • 1 cup water
  • 1 cup wine
  • 3 cups beef broth
  • salt & pepper to taste

I've been making this soup for years. I don't even remember where I got the recipe. It always comes out good
