TORTILLA SOUP

Ingredients

  • 1 medium Onion (chopped)
  • 2 cloves Garlic (chopped)
  • 2 T Olive Oil
  • 2 cans Beef Broth (Swanson 14 oz)
  • 2 cans Chicken Broth (Swanson 14 oz)
  • 1 cup of V8 Vegetable Juice
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 Jalapeno OPTIONAL~(seeded & chopped)
  • 1 tsp Salt
  • 1 tsp Worcestershire sauce
  • 2 cups of chicken (chopped)
  • 2 large fresh Tomato's (chopped)
  • 1 Avocado (peeled and chopped)
  • 2 cups Mozzarella Cheese (shredded)

Directions

  • Saute onion, garlic and chicken in the olive oil. When Chicken is cooked throughly add beef & chicken broth, V8 juice, cumin, chili powder, Worcestershire sauce, jalapeno, and salt. Bring to a boil. Simmer for 1 hour. Add fresh tomato's 5 minutes before serving. In bowl place tortilla chips, mozzarella, and avocado then cover with 2~3 ladles of soup. YUM!!!
