Tracey's Grandma's Fried Rice

Ingredients

4 cups rice
1 pound CHINESE style sausages
2 cups frozen diced carrots and peas
2 cups frozen corn
10 stalks green onion
1 white onion, chopped
OPTIONAL
Bar B Que Pork
Scrambled eggs
Chopped shrimp without shells


Clean the rice. Put 4 cups of rice and 4 1/2 cups water in an automatic rice cooker. After the rice has been cooked, turn off the cooker and uncover the lid. Allow the rice to cool.



Boil the frozen carrots, peas and corn.



Fry the sausages evenly with 2 tablespoons of corn oil on medium high heat for 7 minutes or until lightly browned. Do not microwave sausages. Allow the sausages to cool. Chop the sausages into thin slices



Chop the green onion into quarter inch pieces



Dice the white onion



For option only. Chop the port or lightly fried shrimp into small pieces.



Pour 2 tablespoons of corn oil into a 12' diameter non-stick frying pan. On high heat, first fry all of the onions for 1 minute. Lower the heat to medium and add 3 more tablespoons of corn oil. Slowly add the cooled rice and sliced sausage. While mixing and stirring for 12 minutes, evenly sprinkle 2 tablespoons of soy sauce over the entire contents. Lower the heat to meium-low and add carrots, peas, corn and optional ingredients. Continue stirring for 10 minutes while sprinkling 1 more tablespoon of soy sauce. Serve while hot.
