Trent's Worcestershire Sauce

Ingredients

1-1/2 tsp olive oil
1 medium onion, finely chopped
1 Jalapeno pepper, seeds removed and finely chopped
2 cups white vinegar
1 1/2 cups light corn syrup
1 cup water
2 tsp lemon peel, grated
1 tbsp horseradish
1 1/2 tbsp anchovy paste
1 Tbsp minced garlic
1 tsp salt
3/4 tsp pepper
1/8 tsp ground cloves


Heat oil in heavy large saucepan over medium-high heat. Add onion and pepper, saute until tender. Add remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer, stirring occasionally, about 40 minutes.


Strain into glass jar. Cover. Let sit for 1 week in frig.
