Triple Berry Banana Cupcakes
Full Box of Dassant Louisiana Banana Bread Mix
2 large eggs
1/2 cup melted butter
1/3 cup milk
2 medium mashed bananas
1/3 cup blueberries
1/3 cup cranberries
1/3 cup blackberries
1 cup softened butter
1 teaspoon vanilla extract
1 to 2 tablespoons whipping cream
3 cups powdered sugar
Preheat oven to 350°F.
Line standard muffin pan with decorative paper liners.
Combine eggs, butter, milk, mashed bananas.
Add mix, blend together.
Gently fold in blueberries, cranberries, and blackberries.
Portion batter into prepared baking tins.
Bake for 24 to 26 minutes, or until an inserted cake tester comes out clean. Cool completely.
Combine soften butter, vanilla extract, and whipping cream.
Gradually add powdered sugar and whip until creamy and smooth.
Fill Ziplock® bag, snip off bottom corner, and using a circular motion gently squeeze frosting on each cupcake top.
Garnish with extra berries on top.
