TRIPLE BERRY BANANA CUPCAKES

Ingredients

  • For Cupcakes:
  • Full Box of Dassant Louisiana Banana Bread Mix
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/3 cup milk
  • 2 medium mashed bananas
  • 1/3 cup blueberries
  • 1/3 cup cranberries
  • 1/3 cup blackberries
  • For Topping:
  • 1 cup softened butter
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons whipping cream
  • 3 cups powdered sugar

Directions

  • For Cupcakes:
  • Preheat oven to 350°F.
  • Line standard muffin pan with decorative paper liners.
  • Combine eggs, butter, milk, mashed bananas.
  • Add mix, blend together.
  • Gently fold in blueberries, cranberries, and blackberries.
  • Portion batter into prepared baking tins.
  • Bake for 24 to 26 minutes, or until an inserted cake tester comes out clean. Cool completely.
  • For Topping:
  • Combine soften butter, vanilla extract, and whipping cream.
  • Gradually add powdered sugar and whip until creamy and smooth.
  • Fill Ziplock® bag, snip off bottom corner, and using a circular motion gently squeeze frosting on each cupcake top.
  • Garnish with extra berries on top.
