Triple Citrus Cheesecake
1 c. graham cracker crumbs
1/3 c. brown sugar
1/4 c. melted butter
4 pkg. cream cheese
1 c. sugar
2 Tbl flour
1 tsp vanilla
1 Tbl of each: fresh squeezed lemon juice, lime juice, orange juice and peels of each fruit
Preheat oven to 325 deg
Mix cracker crumbs, brown sugar & butter. Press mixture into spring form pan. Bake crust for 10 minutes. Remove from oven and wrap bottom of pan with tin foil.
Mix cream cheese, sugar, vanilla and flour at medium speed until well blended. Blend in juices and peels. Add eggs one at a time, mix at low speed until blended. Pour over crust. Place cheesecake in a deep baking pan in oven. Pour water in pan. Bake cheesecake in water bath for 1 hour and 5 minutes.
Run knife along edges of pan. Refridgerate for 4 hours.
