Tropical Cream Cheese Frosting
8 oz. cream cheese, softened
1 1/2 cups conf. sugar
1 (20 oz.) can crushed pineapple
2 (8 oz.)cans mandarin oranges
1 (3.5 oz.) package instant cheesecake flavored pudding
1 (8 oz.)container whipped topping, thawed.
In a large bowl, whip cream until soft, then gradually add confectioners' sugar. Stir in well drained pinaeapple & mandarin oranges(also drained).
Mix in dry pudding mix.
Fold in whipped topping.
I use this frosting on lemon or yellow cake, it is perfect for summer parties. I also double the batch because my husband loves to just eat the topping without the cake! If I don't, I won't have enough to frost & fill my cake. This recipe will frost & fill an 8 or 9 inch round cake.
