TROPICAL PIE
Tropical Pie
This pie is so yummy. The recipe makes a lot of filling, but I just bake the remainder in a baking dish.

INGREDIENTS
- 3/4 stick margarine
- 1 1/2 cup sugar
- 1 cup coconut
- 3 Tbsp flour
- 3 eggs, beaten
- 1 20 oz can crushed pineapple (do not drain)
- 1/3 cup sour cream
- 1/3 cup chopped pecans
- 1 unbaked deep dish pie shell
DIRECTIONS
Melt margarine and mix with other ingredients. Pour into pie shell and bake at 350 degrees for 1 hour.
This makes a lot of filling. You can either 1) fill the deep dish pie shell and bake the remaining filling in a 1 quart CorningWare baking dish that has been sprayed with non-stick spray or 2) bake in two regular 9-inch pie shells. I prefer and use option 1. If using option 1, the filling in the baking dish will need to bake the same amount of time as the pie. You could also use ramekins instead of the baking dish.
