- Preparation Time:
- 1/2 c. butter
- 4 egg yolks, beaten
- 1/2 c. boiling water
- 1 1/2 Tb. lemon juice
- 1/4 tsp. salt
- Melt butter in top of double boiler; gradually add beaten eggs yolks, stirring thoroughly. Gradually add boiling water, stirring and lower heat so that water is lower part of double boiler simmers gently; it is important that it does not touch top of double boiler and that is does not boil. Continue stirring 'til sauce thickens.
- Remove double boiler from heat; slowly stir in lemon juice. Add salt and serve immediately; or hold over hot water for as bried a time as possible before servings. Add a dash of paprika for color.
