- 2 gallons cold water
- 1 cup bourbon
- 2 cups Kosher salt
- 1 cup brown sugar
- Put all ingredients in a large pot and stir until sugar and salt are dissolved. Add turkey and refrigerate overnight. Next day, rinse well and proceed as usual with turkey preparation, but watch for additional salt.
- NOTE: If you can't fit turkey inside your fridge, put into a tall kitchen garbage bag and put that into a cooler loaded with ice. Check once in a while to make sure temp hasn't risen above 41º F. If it has, add more ice.
