Turkey Cutlets Piccata
1 (16 oz) pkg of turkey cutlets
1 Large Egg
1 tbsp milk
1 1/2 cups bread crumbs
1 med. Lemon
1 package of chicken flavored bouillon
1/4 tsp salt
Pound cutlet with mallet until 1/8" thickness
beat eggs in pie plate or bowl with milk
place bread crumbs in bowl
dip cutlets in egg mix and then in bread crumbs.
Heat large skillet with 4 Tbsp butter (or olive oil)
Add turkey cutlets and brown on both sides. Remove, set aside.
Reduce heat to low and add lemon juice from lemon into the hot drippings.
stir in bouillon, salt and 3/4 cup of water. Blend and scrape brown bits from bottom around skillet. Return cutlets to skillet and cover for 5 minutes.
Remove from heat serve!
