Turkey Sausage Stuffed Eggplant
1 lb Turkey Sausage
1 cup bread crumbs (seasoned)
1 Medium sized eggplant
Fresh Basil leaves
Salt and Pepper
1/2 cup Chopped Celery
1/4 cup Chopped Onions
1/2 cupChopped Red Peppers
2 cups Cooked and cooled Minute rice
Preheat oven 375
Slice eggplant down the center and scoop out the center where the seeds are, set aside.
In a large empty sausage content from skin into hot skillet with 1 Tbsp of olive oil. Brown Turkey.
Add to large bowl with veggies, bread crumbs, cooked rice and spices.
Brush inside of eggplant with olive oil. Stuff with meat mixture.
Wrap in tin foil and bake for 35 minutes.
