Why I Love This Recipe


Ingredients You'll Need

4 sheets of aluminum foil
4 (4-6oz) halibut fillets (or any white fish)
2 (15 oz) cans Great Northern or cannellini beans,
rinsed and drained
1/2 cup prepared pest, divided
2 medium tomatoes, chopped OR 1 (14oz) can diced
tomatoes, drained
4 tsp lemon juice
1/2 tsp pepper
2 tsp lemon pepper seasoning
4 lemon slices


Directions

Preheat oven ot 450 degrees or grill to medium-high


Rinse any ice glaze from halibut and pat dry with paper towel. Combine beans, tomatoes, and 2 Tbsp pesto; mix well. Center 1/4 bean mixture on each sheet of aluminum foil. Top with halibut; drizzle with lemon juice. Spread halibut with remaining pesto; sprinkle with pepper and lemon pepper. Top with lemon slices. Bring up foil sides. Couble fold top and ends to seal packet, leaving room for heat circulation. Repeat to make 4 packets.


Bake packets 16-20 minutes on cookie sheet in the oven OR grill 14-18 minutes in covered grill
