Twiced Baked Potatoes
4 left-over baked potatoes
1/2 cup Shredded cheddar cheese
4 Tbsp real bacon bits
1 bunch green onions
1/2 cup sour cream
4 Tbsp butter, melted
1/2 tsp salt
Preheat oven to 350 degrees. Cut potatoes in half and scoop out insides and put in a bowl. Be sure to leave at least 1/4" inch of potato on the skin.
Spray a baking dish with Pam and place the scooped out halves in the pan.
In your bowl with the scooped out potatoes, mash and heat in microwave. Then add sour cream, butter, bacon, salt and chopped tops of green onions (chives). Fill the potato skins with this mixture and top with small amount of cheese.
Bake covered in oven for 5-10 minutes, or until the cheese has melted.
