USO Chutney Chicken (my grandfather's favorite!)
1 3 lb. fryer cut into 6 pieces
flour for dusting (seasoned with salt and pepper)
1/2 c. unsalted butter
1 c. diced onions
1 T. vinegar
1 T. sugar
3-4 T. chutney
1/2 c. chicken broth
Preheat oven to 350 degrees.
Dust cleaned chicken with plenty of the flour mixture.
Brown in butter.
Place chicken in casserole and set aside.
In a skillet, simmer all other ingredients for 15 minutes, pour over chicken.
Bake uncovered for one hour.
