Vegan Alfredo with Romanesco

Serves 4 | Prep Time | Cook Time

Ingredients

1/2c Earth Balance Margarine
2 c soymilk (unsweetened is best)
1 package extra firm silken tofu (Mori-nu.. the kind in the tetra pack, 12 oz.)
1-2 tbsp white cooking wine
2 tbsp onion powder
2-3 tsp garlic powder
1-2 tsp sea salt
1-2 tsp black pepper (to taste)
pinch of nutmeg
3-4 tbsp cornstarch powder (more or less, as needed.. it should be
creamy and the margarine should not separate)
1 head romanesco chopped


Mix all ingredients in a food processor. Heat over med lo heat until hot, stirring often. Whisk in cornstarch and heat until just bubbling, do not let boil. Add romanesco. Sauce will be thick when done. Serve with pasta. Makes about 4 cups of sauce + volume of romanesco.
